Spicy Southwest style blackened tuna salad is a quick and delicious meal that packs big flavor. A big thank you Genova for sponsoring this recipe.
Nathan and I love spicy foods; I mean capital L-O-V-E spicy foods; pair our love of bold flavors and spice with seafood and you have one of our favorite meals. When we go out to eat, we will often order seafood tacos; since we’re trying to lighten up our waistlines while still eating delicious food, I’ve been leaning towards more and more salads, packed with lots of flavors and textures.
When Genova Seafood reached out to me about partnering with them and doing some recipe creation – I immediately thought blackened tuna tacos; turns out someone else had that same idea, so I decided to do a Spicy Blackened Southwest Style Tuna Salad.
Y’all, not to pat myself on the back or anything, but I’m brilliant.
Spicy Southwest Style Tuna Salad
I wish I’d taken a picture of Nathan’s face when I drained the Genova Albacore tuna, tossed it with some Creole Style Blackening Seasoning and then tossed it all into a hot pan on the stove. I’m pretty sure that his eyebrows hit his hairline.
If you’re like me, your memories of hot tuna are the tuna casseroles of your childhood – let me assure you, this is NOT that. This couldn’t be further from that. Since the Genova Albacore tuna is packed in olive oil, the seasoning sticks to it, and I didn’t need to use any additional oil in my saute’ pan.
This salad seriously rocks, y’all. Bold flavors, lots of different textures, and it comes together in under 15 minutes!!! BOOM!
This salad is filling, spicy, delicious, and easily customizable! I love that I can add the Genova Tuna to my cart at Kroger and have a scrumptious blackened tuna salad whenever I want; instead of worrying about buying fresh fish and then not cooking it in time and having to throw it out! BONUS! You can use this $1 off coupon for Genova at your local Kroger. If you’re not an albacore fan, Genova also has Yellow-fin tuna packed in olive oil.
You can serve this salad with just a squeeze of lime, as I did, or you could add your favorite Homemade Buttermilk Ranch Dressing, an Avocado ranch, or simply oil and vinegar. I have a new vinaigrette with rosemary and another one with garlic that I can’t wait to share with y’all.
Nathan and I are taking the kids to the frio for our 15th anniversary and I can’t wait to bring a few cans of this tuna with us to the cabin so that we can sit on the back porch overlooking the frio river and eat some yummy fish tacos or this spicy blackened tuna salad while the kids play! My salad will look just like that one, but Nathan will have lettuce and freshly diced jalapeños or habaneros, because that’s just how he rolls.
I know y’all are ready for the recipe, so I’ll quit yammering, and give y’all the recipe.
