Zoodles with a spicy Avocado Garlic Sauce – Thank you California Avocados for sponsoring this post
Have you heard about the Dinner En Blanc trend? Until my peeps at California Avocados told me about them, I hadn’t, and I can’t decide if that makes me tragically un-hip, or if it’s just that wearing all white, dining all white, and me don’t mix…. because really y’all – really 🙂
California Avocados challenged us to create a Dinner En Green, and they even sent us some really fun green themed items to help us get our En Green…. on
I love the beautiful green glasses, candle holders, table runner, and mason jars that they sent us; but I wanted to share a couple of other ways to decorate a Dinner En Green easily, and inexpensively. Now, I must confess that I’m not the queen of decorating like my friend, Sandy, who is possibly the best decorator and hostess that I know, but, I was pretty pleased with myself and what I came up with.
Dinner En Green Decorating Tips
- I put dried split peas in a few of my mousse cups and used them to add a fun, natural bit of green decoration – without spending a lot of green {heh}
- Since my Dinner En Green was in the evening, I put some votives into the green glass candle holders they sent us, but then inspiration struck, and I nestled some votive candles into the dried split peas and that gave me ambiance, light, and decoration! voila!
- Since this was also a collaboration with my partner, California Avocados, I placed a few ripe California Avocados on the table as well. This time, it was definitely Easy Being Green.
At the Dinner En Blanc events; everything is white, from the food to the clothing to the beverages and decorations; so for my Dinner En Green; I had everyone dress in different shades of green, and the food was all green themed – It was Easy Being Green — I know, I know, I just couldn’t help myself.
For the main dish; I made zoodles with a spicy jalapeno, avocado, roasted garlic sauce, and it was SO GOOD, y’all! Nathan and I tried Zoodles for the first time last year when I was making dinner for a friend with Celiacs, and we became instant fans. I love that we can still have pasta, but lighter, and with veggies! We still love our traditional pasta noodles, but it’s nice to have a lighter, less heavy option, too.

I topped my Zoodles with a Jalapeno Avocado Roasted Garlic Sauce that, aside from roasting the garlic, took less than 10 minutes from start to finish, and was so good we were dipping chips in it before the zoodles were ready.
A few other items that found their way onto my Dinner En Green table:
- A Green Salad with Avocado Ranch Dressing
- Garlic Bread sprinkled with fresh parsley
- Key Lime Pie Cheesecake Bars (with a touch of green food coloring)
- Avocado Mint Chocolate Chip Ice Cream
- Green Tea
- Pinot Grigio in Green Goblets
If you’re doing your Dinner En Green as a potluck or friends dinner – challenge your guests to be creative and make sure that every dish has a green theme/component

Zoodles with Spicy Avocado Garlic Sauce: Dinner En Green with California Avocados
Ingredients
Sauce
- 2 medium ripe California Avocados halved with seed removed
- 4 to 5 bulbs of garlic preferably roasted garlic.
- 1 Tablespoon extra virgin olive oil
- The Juice of 2 medium limes about 1/4 Cup
- 2 - 4 medium jalapenos sliced
- salt and pepper to taste
- 2 Tablespoons water to thin sauce to taste
Zoodles
- 5 Medium Zucchini
Instructions
Sauce
- Scoop the flesh of the avocado into a food processor
- Add to that the roasted garlic, olive oil, lime juice, and jalapenos
- Process and taste.
- Add water, salt, and pepper to taste and consistency preference.
Zoodles
- Cut the ends off the zucchini and run them through your spiralizer
- Heat a medium sauce pan over medium-high heat and drizzle 1 to 2 Tablespoons of olive oil in the pan.
- Add the zoodles and sautee lightly. I cook mine about 8 - 10 minutes, We want them cooked, but not mushy.
- Add the sauce to the pan, and toss to coat.
Tomatoes
- In a separate sauce pan over medium-high heat
- Add halved tomatoes and saute until the skin is blackened and blistered
Serve
- Toss this all together and serve
Notes
Nathan suggested that I add crushed red pepper flakes and grated manchego cheese to his plate

thank you! Girl, you NEED a spiralizer, the possibilities are endless! My kids love the zoodles, but we’ve also played with and loved sweet potatoes, squash, and regular potatoes! They take no time to cook, and they’re so bright and fresh!
