Today I’m sharing a super simple idea for holiday candy.
Homemade candy?
Don’t tune me out yet 🙂
I promise this is the most simple recipe for homemade candy you will ever make. No thermometer required. If you have a microwave, you can make this treat, fit for gift giving. Here’s the skinny:
Three ingredients.
One pan.
You can do it.
Grocery List:
- 1 large bag marshmallows, I like Kraft
- 1 lb dipping chocolate
- 2 cups walnuts or pecans
or right into the greased pan.
Place the pan in the fridge or freezer for a quick set (about 10-20 minutes). Remove and cut in to 2×2 inch chunks. Place in cellophane bags and tie with festive ribbon. This keeps well for about a week if sealed in a bag.
Rocky Road Fudge
Ingredients
- 1 lb dipping chocolate
- 1 bag large marshmallows cut in half
- 2 cups walnuts or pecans roughly chopped
- butter for greasing pan
Instructions
- Generously butter bottom and sides of a 9 x 9 or 9 x 13 pan.
- Cut or tear marshmallows in half and place in large bowl.
- Melt dipping chocolate in bowl in microwave or double boiler, taking care to not overheat.
- Mix with spoon until all chocolate is melted and smooth. Set aside.
- Place nuts in large bowl with marshmallows.
- Pour chocolate over marshmallow and nuts. Mix gently.
- Pour ingredients into greased pan.
- Place in refrigerator for quick set.
- Remove from refrigerator and cut into large chunks.
- Place in cellophane and tie with a festive ribbon for gifting
My grandad used to make rocky road fudge at family gatherings. I haven’t had any since he passed away over 8 years ago. I’m definitely going to be making this!
These look great, and very easy as you promised! I’m looking forward to trying these. I imagine they’ll look good in the cellophane too with the contrast between the dark of the chocolate and the white of the marshmallows.

This is not fudge, and for you to be from a “southern kitchen”, quite frankly I’m surprised you’re passing it as such. This is just chocolate coated nuts & marshmallows, not at all fudge in any way way shape or form. Not saying it’s bad, just call it what it is, rocky road clusters not rocky road fudge.
