When we went on our first Carnival Cruise in 2010 – everyone said: Eat the Melting Chocolate Cake. It’s to die for, it’s the best thing on the ship, it’s legendary, it’s incredible, their chocolate cake is the thing of legends.
Seriously, every single person told us to try the molten lava, volcano chocolate, famous melting chocolate cake. That’s a lot to live up to.
We were skeptical, but we figured we had nothing to lose.
That first night, at table 578 , Nathan and I each ordered a Melting Chocolate Cake, and it only took one bite. We moaned. We sighed. We rejoiced. Then we ordered another. Every. Single.
Night.
As soon as I got back to shore and had internet service I emailed my wonderful Carnival contact and begged for the recipe. She emailed, the chef complied, and I got the recipe.
Carnival’s Famous Melting Chocolate Cake
The original instructions for the Carnival Melting Chocolate Cake are included here, but I also converted it for the home cook and Fahrenheit ovens. Here’s the thing, you can make this at home in under 20 minutes, and it is incredible. It’s rich, it’s melt in your mouth delicious, it’s legendary.
But no matter how good it is, nothing compares to eating this while sitting at a white linen-draped table while you’re being attended to by incredibly talented servers as you sail the high seas.
No matter how good you are, you just can’t beat eating incredible food while sailing the high seas.
You. Just. Can’t.

Notes
I am grateful to Carnival Cruise Lines for the amazing partnership that my family and I have with them. They have provided us priceless memories, and wonderful vacations. This post was not sponsored, required, or expected. I just love this recipe and figured it was about time I shared it with y’all; especially seeing as I’ll be eating these cakes every day next week.
*EDITED on 9/24/2015 with an updated version from the Chef de Cuisine on the Carnival Sunshine I will scan the copy when we return home from this cruise.
I have got to try this recipe, looks amazing!
Amanda! They are incredible! You have to try it!
This was definitely the most popular dessert ever!!! So good! Y’all have a blast!! We are addicted to cruising now:)
Lori – it’s SO good! You have to make it at home, it is so easy 🙂 We are super excited, now I just have to pack!!! See you Friday!
I’ve cruised on Carnival so many times and I’ve never even heard of this cake. It must have been since I last cruised because I would have been ALL over it! Loks amazing!
I don’t know when they started serving these – but our first cruise was 2010 and we heard about them from literally everyone! We had them when we cruised in 2014, too! I love cruising! Have a delicious week, friend! Miss you
Soooo, what size are the ramekins??
Hey Gail – these are just the standard ramekins that you can buy at World Market or Pier 1 – I buy them individually and they don’t show a size anywhere, but I filled them with a very full 1/2 Cup of batter and it came to a bit below the rim. They hold exactly 3/4 Cup of liquid all the way to the very top, but if you moved them quickly it would spill. Hope that’s helpful! 🙂 Have a delicious week! Rachel
Wowzers! Will keep this goodie to try!
Is there really anything better than melting chocolate in cake form? Perfect!
You’d be hard pressed to find something yummier 😉
Are you sure it is 6 oz. Sugar and not 2 oz.?
Yes sir. The recipe came directly from the Carnival Cruise Line food and beverage department. 🙂
Is the flour used regular All-Purpose Flour?
Hi Maria, yes, it’s all-purpose flour :0)
can i make this recipe in the microwave?
Hi Kristina,
I have never tried this in the microwave; so I can’t speak to it’s failure or success, but I don’t think this one would be good for that, however, if you try it; I’d be interested in hearing your results! – Rachel 🙂
how do you measure the flour and sugar? do you have the measuring spoon or measuring cup measurements?
Hi McKenzie… the chef gave them to me in weights, which is how it’s done in professional kitchens (and especially with Europeans!) I just use a simple digital scale and it works perfectly! I can send you the link to the one that I use on amazon if you’d like!
Please do! Thank you Rachel
Here you are! I have this one in red and I love it! It’s easy to use and you can switch from US to metric easily and it allows you to zero out with a bowl or cup on it, too! https://amzn.to/2SHDtbu <<< amazon affiliate
One says 200 and the other says 390, not sure which one is right. Hoping the 390
Hi Amanda, the 390 is Farenheit and 200 is Celsius 🙂 Sorry for the late reply! I was traveling. Hope y’all loved them!
Can these be made ahead of time and baked later?
