Easy and Delicious Meatloaf made in Muffin Tins
So y’all know that I’m doing the Two Weeks of Recipes with Sam’s Club and Kraft and this recipe is so fabulously DEELISH that I had to share it with you.
This meatloaf recipe is so simple to make, and it is just awesome! I have a hard time getting Nathan to eat meatloaf, he is just not a fan and while I love meatloaf I have never understood the whole ketchup sauce topping glaze thing. So when I opened my menu planner (get yours here) and saw Cheese & Salsa & MINI meatloaves well… my interest was piqued and I have to admit there might have been a bit of mouth-watering going on.
We have friends and a brother visiting right now, and that means there are THREE additional men to feed. Three big men, the kind of men who are over 6 feet tall with big Texas men appetites. EVERYONE gave this meal and thumbs up and requested more, more, more.
So.. here you have it. I doubled the recipe to accommodate the 6 of us and I prepped the meat hours ahead of time and covered it and put it in the fridge.

I will be back tomorrow to tell you all about my first week and my thoughts on one stop shopping, the menu planner and more.
Today, was just all about the recipe because it really was that delicious.

@busydadblog have darling wife pipe the mashed potatoes on top like frosting and you’ll be good to go!
These are awesome!
Because you’re awesome. Also…I happen to be in possession of a 6ft+ man with a Greek appetite. My guess is that it’s similar to a Texas appetite in its black hole-esque qualities. I better get on this 🙂

I would rather eat a tray of those than a tray of cupcakes! Maybe I will ask for those for my birthday. Cheesy meatloavy goodness with a candle on top!

I might actually have to try this! Like Nathan, Mike *hates* meatloaf, whereas I love the stuff. This might actually be the way for him to eat it!
Thanks, Rachel!
Last week I made some mini meatloaves myself! (I even made an extra batch and froze them!)
Look at me, all domestic and stuff. 😉

Can I sub bread crumbs for the crackers and if so how much would you recommend?
Hi Cindy,
Absolutely! I would wager to say about 1 Cup breadcrumbs. Would love to hear how this works for you!
Have a delicious week!
Rachel
