There are many recipes that invoke powerful memories by their mere taste and smell, homemade granola is one of those recipes for me.
The scent of homemade granola whisks me back to childhood and bare feet, kiddie pools, crayons and laughter.
I’ve shared my own somewhat adapted homemade granola recipe with y’all before and to this day it remains one of my favorite recipes.
Since sharing that recipe with y’all, I have discovered Coconut Oil.
I am not exaggerating in the least when I tell y’all that I. Love. Coconut Oil

… and since several of y’all expressed a dislike of my use of vegetable oil in the granola… I decided to try it with coconut oil instead.
I was anything but disappointed.
I think this is my new favorite.
Seriously, y’all.
Make this for yourself.. make it for your friends… make it as a gift for your favorite teachers…

Homemade Granola with Coconut Oil
Ingredients
- 6 C oats NOT the quick cooking ones
- 1 C sliced almonds
- 1 C chopped walnuts
- 1 1/2 C shredded unsweetened coconut
- 1 C applesauce
- 1/2 C honey
- 2 Tbsp pure vanilla extract
- 2 rounded Tbsp Coconut Oil
- 1/2 C dark brown sugar packed
- 1/2 tsp roasted cinnamon
- 1 C raisins
- 1 C dried cranberries
Instructions
- In your biggest mixing bowl, mix together; oats, almonds, walnuts and coconut
- In a small bowl mix together: honey, applesauce, coconut oil, vanilla, cinnamon and brown sugar.
- Pour the applesauce mixture over the oat mixture and combine thoroughly. Use your hands (preferred) or a spoon and mix until thoroughly combined
- Spread the mixture over two baking sheets and bake at 250 F for about 1 hour 20 minutes.
- If the baking sheet is light (in color) it will take about 1 hour 20 minutes, if it’s dark/non-stick it will take about 1 hour (these are {abouts} it will depend on your oven, you want the granola to have turned a lovely golden brown, but not be crisp.
- The granola will get crispy after it’s removed from the oven and allowed to cool
- Stir the granola on the baking sheet every 20 minutes while cooking
- Remove from the heat and allow to cool, this is when it will crisp up
- add in dried fruit: cranberries, raisins, cherries, apples etc…

We love homemade granola! I love to use coconut oil in my granola and I think it gives it a crisper texture. It is basically the only oil I use in my granola now. I love the addition of applesauce in your version of granola. That is perfect for fall.

I’m with you in loving granola, but not so much the vegetable oil in it. I usually use grapeseed because it has no taste, but I am also a huge fan of coconut oil. Except that oddly I still haven’t bought any. It’s beyond awesome. I may have to test your recipe out and see how it compares to what I usually make. Fall’s coming – that’s granola weather in our house!
