Grilled Barbecue Chicken, Bacon, Caramelized Onion Pizza

It’s no secret that I love to grill – I’ve shared pictures of our multiple grills with y’all and I share grilling recipes pretty frequently.  One of the joys of living in Texas is being able to grill year round.  God Blessed Texas, y’all.

One of our favorite new discoveries is grilled pizza.  If you’ve never grilled a pizza, you’re in for a treat!  It’s easier than you think, and incredibly yummy. 

Whenever there’s a game on we can be found hanging out with the neighbors, grilling foods, cheering for our favorite teams (we’re a street divided) and eating lots and lots of food.  From burgers and wings, to steaks and fajitas, to barbecue chicken tacos and more.  If you can put it on a grill, we will make it.

I decided to surprise the neighbors with these pizzas – I paired up some of my favorite ingredients – chicken, bacon, and caramelized onions – and the results were mouthwateringly delicious.  These didn’t last 5 minutes on the table before the only things left were crumbs on the plates.

Kraft Barbecue sauce sent me some of their reformulated barbecue sauces to play around with. Kraft has revamped their line of barbecue sauces to feature high quality ingredients like tomatoes, cider vinegar, sweet molasses, and cane sugar.  I chose to pair up the Kraft Original Barbecue Sauce and the Kraft Thick & Spicy Barbecue Sauce for these pizzas.  The combination of the slightly sweet, and the spicy was perfect.  The neighbors raved about these pizzas and asked when I was making them again.

In addition the the sauces; Kraft Barbecue Sauce sent me on of their new Evergriller innovations– a warm and cozy hat, called the Hot Head Hat, which came with rechargeable ear warmers and a detachable sauce dispenser.  An Evergriller is someone, like my family and me, who loves to grill all year long.  The Hot Head Hat is here to keep us grilling throughout the colder weather.  I love when brands know how to have fun! Nathan has claimed it as his, and proudly manned it while helping me make these pizzas.

Back to the pizza!

Once your chicken and caramelized onions are ready, you’re almost there!

At this point, it’s a matter of having all the ingredients ready to go – because from here – you’re less than 10 minutes away from piping hot, crispy, delicious barbecue chicken pizza nirvana.

Grilled pizzas are incredibly delicious and easy to make, but you have to have all your ingredients pepped and ready to go, because grilled pizza is done very quickly!

You should definitely make these pizzas for your next get together! Once they’re cooked, just slice them up and watch them disappear!

Grilled Barbecue Chicken Pizza with Caramelized Onions and Bacon

Savory, Spicy, Sweet Grilled Barbecue Chicken Pizza with Caramelized Onions and Bacon

Ingredients

  • 2 thin crust pizza dough - we prefer square they cut better into bites for a crowd
  • 1 bottle <i>Kraft</i> Original Barbecue Sauce
  • 1 bottle <i>Kraft Thick & Spicy</i> Barbecue Sauce
  • 3 chicken breasts
  • 2 medium yellow onions sliced 1/4" thick
  • 6 pieces bacon cooked crispy
  • 2 Cups favorite pizza cheese; I use an Italian blend
  • Olive oil for drizzling
  • 1/4 Cup butter

Instructions

  • Place your chicken breasts in a zip-close plastic baggie with 1 1/2 Cups Kraft Original Barbecue Sauce and set aside to marinate for 30 minutes to overnight (if longer than 30 minutes, place in the refrigerator)
  • Heat your barbecue pit to medium high or 375°F Line one half of your heated grill with a grilling mat to caramelize the onions
  • Place your barbecue sauce marinated chicken on your heated grill - On the grilling mat, melt the butter, toss the onions on top of the butter and add 1/4 Cup Kraft Thick & Spicy Barbecue Sauce.
  • While the chicken cooks - use tongs to move the onions around in the butter and barbecue sauce mixture to caramelize. Cook the chicken until it has an internal temperature of 165°F. The thickness of your chicken and your grill will determine how long this takes. It takes about 15 minutes on my grill - flipping the chicken only once during the cooking process.
  • Remove the chicken and the onions from the grill and set aside.
  • Raise the temperature on your grill to 450°F
  • Chop the chicken into bite sized pieces while the grill is heating up

!!!!! Special Notes!!!!! This part is super important - make sure you have all of your ingredients prepped and ready to go! Once you start the pizza cooking process it goes very quickly!

  • Brush the thin crust pizza dough lightly with olive oil and place on the grill; you will cook this for about 3-5 minutes and then flip them over. Once you've flipped the pizza over it's time to assemble the pizzas - you have to work quickly.
  • Spread Kraft Thick & Spicy Barbecue Sauce over the pizzas and top with chopped chicken, bacon, caramelized onions and cheese - get creative and have fun.
  • Close the lid to your grill and let cook about 5 minutes until the cheese is melted and the dough is crispy.
  • Remove the pizzas from the grill; slice and serve

Notes

These grilled pizzas are perfect for a football watching party, a birthday party, any gathering. You could even set up a Make Your Own Pizza Topping Bar and allow guests to customize their different Barbecue Pizzas with things like jalapenos, pineapples, crushed red peppers, different cheeses, veggies, etc...

  1. I think my hubby needs a Hot Head Hat, too, as he will scrape snow off the grill to make dinner! What a marvelous pizza topping—I think these nibbles would be the first to disappear at any party!
