My Easter meal was a gift. It was spent at a good friend’s house with her family and watching our husband’s meet, bond and then spend 3 straight days hanging out, laughing, shooting nerf darts and flying mini helicopters around the house while our 5 children giggled, whispered, laughed, pouted, shouted and bonded… I have no words. It was a gift and my heart is overflowing with love and joy and peace.
I sat and SHE cooked. I cut and chopped and WE cooked together. We cooked TOGETHER.
In HER kitchen. We fed our families, we filled their bellies and their hearts and together we created memories.
It was a gift.
I don’t have a recipe today, I’ve just gotten home and I am playing a MEAN game of “ketchup” I will however, tease you with some pictures.

Sounds like a AWESOME Easter you had!!……..funny little side note, my hubby JUST got a little mini remote control helicopter and has been flying it non-stop in our house for the past week! lol…..how funny is that?!

No time for recipes, but I had a wonderful feast as well. We got invited to the preacher’s house after church (which was awesome since we totally forgot about how all the restaurants would be closed and would have starved otherwise). We took a Rotisserie chicken from Wal-Mart at the last minute (greedy Walmart was open on Easter!). They served ham, broccoli rice casserole, potato-sour-cream-cheese casserole, green beans, salad, fruit salad, deviled eggs, home made rolls, our chicken, sweet tea, carrot cake, some sort of buttery iced dump cake that I am still salivating over (need recipe for that one!), glazed easter sugar cookies, chocolate pudding layer cake, and oatmeal cookies with raisins. We were all stuffed and I’m not saying if I went back for seconds… or thirds. Hey – I’m still nursing. Shut up.
Ohmigosh.

That sounds AMAZING. I’m not nursing and I’d have DEFINITELY gone back for 3rds or 4ths of that heavenliness.
I have to let you know that your Potato Casserole with Sun-Dried Tomato and Basil Cream Cheese is now one of our favorite potato recipes. It turned out perfectly scrumptious! I will be making this every Easter (and lots of other times, too).

Hey – you are a Southern girl…I tried cheesy grits and shrimp for the first time a few weeks ago. YUM! I was shocked by how much I liked it. But the recipes I’ve seen would bring down an elephant with the amount of butter, cream, and cheese. Do you make them? If so, do you make them in such a way that they won’t stop my heart instantly? They don’t have to be healthy…just not likely to require bypass surgery directly afterward.

We were blessed to spend the weekend with friends in the city where we used to live–this is the fifth Easter we’ve spent together with them. I love friends who’ve become family! We had a bonafide feast of ham, cheesy potatoes, sweet potatoes with lemon and brown sugar, green beans, broccolini, jell-o salad, green salad, rolls, and three kinds of dessert!

Looks absolutely delicious, and what a great way to spend your Easter!! Spent Easter with my daughter, my mother, sister and a couple of close friends. My hubby was in Iraq this year, so he got cookies and cards from us.
Um, yum! Everything looks so fresh and yummy. How neat to cook together, too! I guess I was in a roasting mood – roasted chicken, roasted new potatoes, & roasted asparagus. At least I was nice all Easter day long and didn’t roast a single person! Have a blessed week. Thanks for hosting.

After church, we had ham, salmon, rolls, asparagus, mashed potatos, peas, jello mold, strawberry shortcake and chocolate cake.
Really jealous! sounds like a rockin’ good time! We had lamb, ham and smoked turkey. Greek potato salad that was to DIE for, homemade artisanal bread, strawberry jello salad, yummy green salad with candied pecans, garlicky zucchini casserole, incredible desserts including sour cream coconut cake and ban-offee pie…Crazy to have so much food that you can’t even begin to fit it all on your plate! Too many good cooks can be hard on the jeans the next day 🙂 oh and a lamb carved out of butter…you can see THAT work of art here : bit.ly/9YJted
Easter coincided with Spring Break this year, and because of our church commitments, we couldn’t take our usual week’s vacation. So we took a road trip to Nashville and stayed at the Opryland hotel! Which was wonderful, of course, but it meant that we were on the road back to Chicago on Saturday. Then we spent Sunday morning at church, so who was the loser at the grocery store on Easter at 4:00 p.m.? Yours truly.
So we had pork tenderloin marinated in lemon and herbs, boiled new potatoes, and asparagus–with noodles and buttery carrots added for the picky eaters.
For dessert we had a big cake shaped like a cross (!) decorated with frosting flowers from the store bakery. I was looking for a lamb cake, but the cross was the only one left. (And they should totally have marked it down, because who was going to buy it on Monday? But no, I had to pay retail for my edible religious symbol!)
