Thursday is Cinco De Mayo.
That’s 5th of May for those of you who don’t know a lick of Spanish or Spanglish (as the case may be)
Now for today’s history lesson:
Cinco De Mayo is a holiday held on May 5 ththat commemorates the Mexican Army’s unlikely victory over French forces at the Battle of Pueblo on May 5, 1862, under the leadership of General Ignacio Zaragoza Seguín. (not to be confused with Mexican Independence Day, which is September 16th.
Now that history is out of the way (Aliah, feel free to speak up and weigh in, my history-goddess-teacher-friend)
I thought I’d share how most people down here in South Texas will be celebrating —
There will be tequila in the form of ‘ritas
There will be the best guacamole ever
and there will be fajitas and tacos and spicy shrimp taquitos.

Mmm–I love Mexican food! I miss it terribly here in New Zealand (my husband and I are traveling this year). Tacos on soft corn tortillas are one of my favorites–I’ve linked up to my Fish Taco recipe above.

My brother would envy you! He lived in Texas for a few years and loved it there because of the food. In fact, he often says he hasn’t had a decent Mexican meal in y-e-a-r-s because outside of Mexico, Texans are the only ones who know how to make it right. Next time he says that, I might send him over to your house for some of that yummy looking guacamole!

Living in Wisconsin sometimes makes it hard to find “real” Mexican food.
I’ll probably make tacos (we haven’t had them in awhile) for dinner, but not much beyond that, I don’t think.

Mexican food is my comfort food. I planned out my menu for May and I think I have Mexican food planned twice a week, every week.Enchiladas are my favorite.

YUM!!! My husband wants to make like half of these recipes! Especially the fried icecream! Spicy shrip taquitos also sound AMAZING!!!!!!! I would also suggest adding Micheladas to your drink menu! Its so delish! I just posted the recipe!

Wow – these look delicious! I’ll be coming back from Columbus, TX, that night, so we may substitute homemade for our favorite Tex-Mex spot this year.
