Today, I’m sharing a quick and easy quesadilla recipe that doesn’t take much time to throw together, yet has so many layers of flavor and textures that they taste more complicated than they are! It started with a dream of mashed ripe California avocados and my favorite homemade taco seasoning cumin, garlic, red pepper.. oh my!
Mix that creamy, savory, avocado mixture with a squeeze of lemon, and then pair that with some rich, fiber packed, refried black beans… and you have one of my new favorite snacks
Don’t forget the cheese! My favorite is a creamy extra sharp cheddar, Nathan prefers pepper jack, the kids like a cheddar, colby, mozzarella mix. Pick your favorite cheese and get on with the melty goodness!

Easy Cheesy Avocado Quesadillas
Ingredients
- 2 ripe California Avocados seeded and peeled
- 1 teaspoon taco seasoning {I use this recipe}
- 1/2 medium lemon
- 1 16 oz can refried black beans
- 2 Cups Sharp Cheddar Cheese
- 8 6 " tortillas I use a whole wheat/corn blend
Instructions
- Heat a skillet to medium low heat
- Using a fork, or pastry blender, combine the taco seasoning and California Avocados until mashed, but still chunky
- Squeeze the juice of the lemon over the Avocado mixture and mix
- Heat the refried black beans
- Spread a layer of Avocado mixture on one tortilla, spread the heated refried beans on another tortilla. Sprinkle cheese over one of the tortillas, top with the other tortilla.
- Cook the quesadillas about 3 minutes per side, or until the tortilla is crispy, and the insides of the quesadillas are heated and begin to combine.
- Remove from heat and set on a cooling rack for a few minutes prior to cutting.

I’ll take a mix of all those cheeses! These quesadillas look awesome. I just used half an avocado in a smoothie and love the creaminess it adds. I need to use them in more savory dishes like this!
