Using a fork, or pastry blender, combine the taco seasoning and California Avocados until mashed, but still chunky
Squeeze the juice of the lemon over the Avocado mixture and mix
Heat the refried black beans
Spread a layer of Avocado mixture on one tortilla, spread the heated refried beans on another tortilla. Sprinkle cheese over one of the tortillas, top with the other tortilla.
Cook the quesadillas about 3 minutes per side, or until the tortilla is crispy, and the insides of the quesadillas are heated and begin to combine.
Remove from heat and set on a cooling rack for a few minutes prior to cutting.
