Roasted Garlic, Chipotle, Red Pepper Hummus

Ingredients

  • 1 large can 29 oz about 2 Cups garbanzo beans/chickpeas, drained and rinsed
  • 1/2 Cup extra virgin olive oil
  • Zest and Juice of 1 lemon about 3 Tablespoons
  • 3 roasted garlic cloves
  • 1/4 cup cumin
  • 1 Tablespoon crushed red pepper
  • 2 chipotles in adobo sauce
  • 2 teaspoons adobo sauce
  • 1/4 teaspoon salt
  • 1/4 Cup water
  • fresh ground pepper to taste

Instructions

  • Combine all the ingredients in a food processor and blend until smooth.
  • Taste and adjust seasoning to taste, if you find it too spicy, add a tsp of honey.
  • For serving, top with a drizzle of olive oil and a sprinkling of crushed red pepper
  • Serve immediately or refrigerate for 3 - 5 days
