Quick Summer Berry Cakes

Ingredients

  • 1 3.4 oz pkg French Vanilla Pudding Mix
  • 1 20 oz can crushed pineapple don't drain
  • 2 C whipped topping
  • 1 tsp vanilla bean paste
  • 3 C fresh berries
  • 1 dozen mini angel food or pound cakes

Instructions

  • Blend together the pineapple, pudding mix, whipped topping, and vanilla bean paste
  • Put in the refrigerator, if not using immediately
  • Once ready to serve, pre-heat the oven to 375...
  • Place the cakes on a baking sheet in the oven and bake about 7 minutes, or until golden and warm.
  • Spoon the filling on top of the cakes and top with fresh berries
  • Serve on an additional scoop of filling for extra deliciousness
