Okay – On to this week’s Meal Plan!

monday

I feel like Cauliflower is popping up everywhere in my life and in my meal plans lately, so… sorry not sorry ;-).  One of Princess’ best friends loves cauliflower so every time I buy it, they ask.. “Is Bray coming over?” Nathan and I are trying to eat healthier because Heaven knows we aren’t getting any younger and we need to set better examples for the kids and so we can be the best versions of ourselves!

I love the flavors and textures in this Shrimp and Bacon Cauliflower Fried from Bobbi’s Kozy Kitchen!  This could be a side dish or a main dish, depending on your menu.

Tuesday

If you’re looking for a yummy dish full of flavor that can be made ahead of time and on your table in under 30 minutes; these Caribbean Tacos from Snappy Gourmet are just the thing!  Bright flavors, lots of textures, and while she makes these with Pork – I think this would also work well with a mild fish like mahi mahi or salmon!! YUM.

Thursday

My slow cooker is one of my favorite kitchen tools.  I truly believe that everyone should have a slow cooker, and use it. FREQUENTLY.  Especially for things like these Slow Cooker Chicken Nachos from Life is But a Dish.  Chicken in the slow cooker is awesome!  You could make this chicken and use it for these loaded nachos one night, tacos the next, salads etc… Multi-use for the win!

Friday

Twice Baked Potatoes are my jam (Pitch Perfect anyone?) I adore twice baked potatoes and when you stuff them with spicy grilled sausage and smother them with cheese and green onions – have mercy! (uncle Jesse)  We grill a few days a week so there’s usually leftover grilled sausage around the house, and these twice baked potatoes come together so easily, and they’re so scrumptious.  Seriously, Mouth Watering, y’all.  This is hands down one of my favorite meals, favorite comfort foods. If you’re looking to test your baking abilities and have a little fun while you’re at it, I present to you:  Overnight Sweet Potato Monkey Bread from Farm Fresh Feasts.  This uses TWO different colored sweet potatoes, some incredible homemade dough – and I imagine that it’s even more delicious than it is lovely.

Is it just me, or are Sundays made for comfort foods and family time?  Meatloaf just seems like a Sunday food, doesn’t it?  Jennifer Cooks has a wonderful recipe for a Homestyle Meatloaf that will take you straight back to your Granny’s table and childhood.
