I want to talk about spicy pulled slow cooker pork wrapped up in tortillas and baked until crisp, then dipped in creamy, somewhat zingy, avocado dipping sauce.

Let’s talk about easy, delicious, and perfect for your Cinco de Mayo fiesta!

One of my favorite go to recipes is slow cooker pulled pork because it is easily made, and once made – it can be served in so many different ways: stuffed potatoes, sliders, tacos, wontons, quesadillas – the possibilities are only limited by one’s imagination.

I decided that for today’s Cinco de Mayo themed recipe for California Avocados, that I would do a twist on my go to bbq pulled pork with some of my favorite latin flavors, and my favorite mexican beer:  Dos XX.

When my mom and I got home from our busy day, the smell in the house was absolutely mouth watering.  Cumin, onion, cayenne…. – it was hard to wait.

I had so many ideas for this post:  quesadillas – wontons – sliders – mini pizzas

After talking with Nathan and discussing our favorites, as well as kind of going outside of our normal dishes, I decided to make baked taquitos.

 

There was this place in Sparks, where we lived when I was a teenager, that made the most amazing taquitos.  They were crispy, spicy, and just the right amount of greasy.

My mom and brothers and I would get them by the bag and devour them, my friends and I would go off campus for lunch and inhale them while we giggled over boys, talked about drill team routines and kick lines, and studied our spanish vocab.

My mom and brothers and I still reminisce about those taquitos, and it’s been over 18 years since we last had them.

It was those taquitos that were on my mind,  when I started tinkering with this recipe.

I was looking to create something with lots of layers of flavors and textures, and I wanted to pair it with a dipping sauce that would complement the spice, and soothe the palate.

I played with different tortillas, I went through 6 different avocado sauces, and I turned my kitchen into a disaster zone, but it’s worth it.

I had so much fun playing with textures, flavors and snacking on the delicious California Avocado sauces that I made.

I was thinking of each of you while I did it, envisioning y’all in your own kitchens with a bunch of fresh california avocaodos in front of you, and tasty cinco de mayo themed recipes running through your minds.

Baked Pork Taquitos with Cilantro Avocado Dipping Sauce

OH YES… the recipe for those Baked taquitos with that yummy california avocado cream sauce…

Spicy Pulled Pork Baked Taquitos with Cool Avocado Cream Dipping Sauce

Ingredients

The Taquitos

  • 3 C mixed blend cheese
  • Spicy Pulled Pork
  • 1 can black beans drained
  • 1 can kernel corn drained
  • 20 flour tortillas
  • cooking spray
  • kosher salt

Instructions

  • Preheat oven to 425°F
  • If your pulled pork is still warm in the slow cooker - move on to step 2, if it's not - warm up the pulled pork.
  • Drain the beans and corn and mix them into the pulled pork and simmer over low heat while the oven heats up, and you prep the tortillas and cheese.
  • **Tortillas are tricky - if you have good tortillas, they will roll with no issue .. some tortillas you need to warm up with a damp paper towel before rolling****
  • Grab a tortilla, and place a bit of cheese on the tortilla - place some spicy pulled pork on the tortilla and then tight roll the tortilla and place seam side down in your greased baking dish.
  • Repeat this until your baking dish is full.
  • Bake in the oven about 20 minutes, or until the taquitos are golden brown and crisp.

Notes

You can cut these in half to make them go farther, and make them more party friendly, or you can serve them whole.
Serve with creamy avocado dipping sauce.

  2. I wish I had some of those Nevada taquitos right now. I lived off of them for the 2 months after you, Michael and Dad moved to Austin. I can’t wait to try yours. Soon? Love you.

  3. These sound so delicious. When I try them, I’ll also try substituting the sour cream with plain greek yogurt. That usually works for me as a substitution and doesn’t alter the taste. Great inspiration!
