Happy Monday, y’all!

What a delicious and busy weekend we had.  We took the kids to the Shell Houston Open where we laughed, watched super-star golfers, helped donate to some wonderful charities (which is what the Shell Houston Open does), ate some yummy food, talked, made memories and enjoyed some family time.  Saturday, we worked around the house, and I finished my office {insert Hallelujah Chorus}, and we had a truly delightful Easter filled with friends, food, Egg Hunts, and  happiness.

  1. Chinese food is one of those foods, along with Mexican, that I could eat every single day and probably not get tired of it.   I absolutely love Pepper Steak, it’s one of my favorites, and the thought of making it in the slow cooker – ummm yes, please!  Go check out Flour on My Face’s Easy Crock Pot Pepper Steak Recipe, y’all – it’s delightful!
  2. What do you get when you marry Empanadas with Chile Rellenos?  You get an explosion of flavor and happiness!  Frugal Foodie Mama has the right idea with these Easy Chile Relleno Empanadas.  Love. Love. Love!
  3. Jalapenos and Artichokes in one dish – yes, please!  Those are two of my favorite things, and I absolutely can’t wait to make this Jalapeno Artichoke Chicken Bake from Dizzy, Busy, and Hungry. Seriously adding it to this month’s menu plan.
  4. Baked Sweet Potato Fries are a delicious alternative to traditional fries and when you top them with olives and feta like Play. Party. Pin has with her Greek Sweet Potato Fries – well, let’s just say there’s a new party food in town, y’all.
