What a WEEK!

School started.

My mom was in the hospital recovering from an esophagectamy for esophageal cancer.

We brought her home to our house Saturday evening, and we’ve turned the guest room into a makeshift hospital room, and it was a holiday weekend, and.. and… and….

I kinda missed Monday.

I love shrimp. We eat it in the Spicy Grilled Shrimp Quesadillas with Smoky Avocado Cream Sauce,  grilled, fried, sauteed and chilled – so this Stir-Fried Shrimp with Summer Veggies from Haley’s Daily Blog caught my eye immediately! I can envision so many ways to enjoy this!!

 

I love apple butter.  It’s one of my favorite toppings for toast and it’s a must for Sweet and Spicy Chicken Thighs

 

it never dawned on me to try making it at home, much less to make something as awesome as this Crockpot Spiced Peach Butter.  This recipe from Stacy Makes Cents had my mouth literally watering and the wheels in my mind turning.

 

Are you savory or sweet, spicy or sweet?  What’s your favorite?  Either way, I’m fairly certain that these Maple Cardamom Mini-Cupcakes with Chocolate Icing will delight you.  I think they’re adorable, and I love the slightly spicy/citrusy cardamom twist – especially when combined with chocolate.
