I’m going to share with you a recipe that’s been in my family for years. My Mom always used to make these yummy bites to take to friends and family at Christmas time. I loved that she made them but hated that she gave them away!
They are an addicting combination of Graham Cracker, Marshmallow and Coconut and I can NEVER eat just one, so I always give them away too!

Graham Cracker Bites
Print RecipeIngredients
- 2 eggs beaten
- 1/2 c butter
- 1 c sugar
- 30 squares of graham crackers crushed
- 1/2 c coconut
- 2 c mini marshmallows
- optional: 1/2 c chopped walnuts
Instructions
- Cook the eggs, butter and sugar in a double boiler over low heat until the sugar is dissolved and the mixture has thickened. About 5-10 min. Cool.
- Combine remaining ingredients in a large bowl.
- Mix in the egg mixture and spread on to a 9 x 13 pan. Chill.
- Cut into 1” squares and roll into balls, dip in powdered sugar to finish.
I’m speechless!! These look DELICIOUS! So creative.. I can’t wait to give them a try!
These looked so delicious and yummy until I read “Marshmallows” ..
They must have a purpose but could they be substituted with something else? I love this idea except for them…thanks.
Quick question – is the 30 squares 2 rectangles or 4 rectangles? I hope that makes sense 🙂
Shannon, I’m pretty sure that 30 squares is equal to 2 rectangles… but I’m going to forward your question on to Melissa and we shall see!
