=============================================================================================
Hi there! I’m Lindsey Johnson from Cafe Johnsonia.I’m so happy to be joining in the holiday bake, craft & sew for the first time this year.
We always give homemade goodies away to neighbors and friends during the holiday. Usually I make caramels and toffee. One of my favorite gifts to receive is homemade granola. So this year that’s what I decided to give as gifts instead of candy. My Gingerbread Granola is a variation on Molly Wizenberg’s Everyday Granola. It’s packed with oats, nuts and coconut, fragrant spices and candied ginger. It smells divine as it’s baking and tastes just like gingerbread cookies. I hope you’ll love it as much as we do!
I’ve put together a little tutorial to show you how easy it is to make granola at home. (It’s also quite a bit cheaper!)
Let’s get started! Here are our ingredients: oats, coconut, nuts, brown sugar, molasses, honey, coconut oil, spices, and candied ginger. Most of these you probably already have in your cupboard right now.
Next you stir the oats, coconut and pecans together in a large bowl
Then stir together the brown sugar, honey, molasses, coconut oil, spices and salt.
Heat the liquid ingredients just until boiling. That takes about 3-5 minutes depending on how high the heat is on the stove. Pour the syrup over the dry ingredients.
Stir well with a wooden spoon until everything is coated.
Spread on a a parchment-lined rimmed baking.
Bake for 30 minutes at 300 degree F, stirring every 10 minutes. Remove from oven and let cool completely.
Transfer to jars or bags.
Add a cute tag. I made a gingerbread man tag using a small cookie cutter.
And it’s ready to give away!

This is such a lovely idea! It would be a great little gift for neighbors around Christmas time!
This series is wonderful. This recipe is a keeper. I may make this one my gift for the family. Last year we gave out gluten-free cranberry walnut bread-delicious!!
I love this idea. Could you let me know how long can you store the granola in canning jars. (how long it stays good). Thanks so much,
I was excited when your family moved to Katy as I have family in Katy so you give me another connection to that part of the country. I live on the Seacoast of NH. Some days I like to live your weather!!!!!!!!!! Thanks for so many great ideas.
@Lynne that’s a great question! We eat ours so quickly that I’ve never had it around for more than a few days before it’s time for another batch. 🙂 But I would say it would last for several months in an airtight container/jar. The only thing that might affect it is the candied ginger, which could make the granola turn a little sticky or stale. I’m thinking you could pop it back into the oven on a baking sheet and crisp it back up if that was an issue. You could totally make this ahead of time though and always add the candied ginger when you eat it. 🙂
Love the idea of making gingerbread granola! What a great gift to give!
I am excited to try this! Do you know if maple syrup would work as a replacement for molasses? I don’t have any on hand and want to make it without having to run to the store first 🙂
Could I use olive oil instead of coconut oil? Can’t wait to try!
I can not seem to find where/when you add the candied ginger into the mix.
Making this now! The smell is heavenly!
Where do you add candied ginger
*this was a guest poster’s recipe, but I believe in step 4 with all the spices….
