I look for sharpness and ease of handling.
Well, you already know my answer: how ninjatastic they are. But since ninjatasticness can never be measured, created, nor destroyed, I will have to say that in addition to how well they hold an edge (which is of course obvious), I look for good weight balance. Cutting is all about translating fluid motion into a singular point (my dad taught me that as a kid). The better weight balance your knife has, the better it can translate your ninjatasticness to a tomato.

Obviously sharpness, but also a good quality handle that won’t break off after months of use.
I look for a knife that is of course exceptionally sharp but also not to heavy.
I am a sucker for a GREAT knife. I have tried various ones, but am always let down. I want a knife that really can slice through veggies as if they are butter. I want a knife that fits in my hand comfortably. And in the words of my 3rd grader, all in all, I want a knife that does all the wonderful things it is actually advertised doing! ;o)
How a knife feels in my hand is important, as well as a quality handle.
Stays sharp, has some heft to it, good grip. A good knife makes cooking so much more enjoyable!
The sharpness of the blade is the selling point for me. It also has to have a good handle to grip!
I consider how they feel in my hand and whether or not they would be difficult to keep sharpened. (I want to keep my knives sharp but I don’t want to have to have some special training or know-how to accomplish that.)

Honestly, I’ve never bought a knife. We have the most craptastic knives ever. I hate them. I would like something that we could sharpen ourselves and that fits nicely into my hand though.

Besides an excellent blade, I like a balanced weight and an ease in the hand. These look fantastic–no rivets to fall out and more sanitary. Great giveaway.
Mostly, the most important thing would be how it feels. These grips look awesome! You know the balance and the blades will be good as long as you look for a good quality knife. The grip/handle is just about the only thing that can vary much. I’ll be adding these to my Christmas list!

I’ve been looking for a new knife and the most important thing I’ve noticed is the fit in your hand. Some just feel awkward. I think a knife that feels comfortable in your hand is going to give you better control. And I’m kind of accident prone so I need all the help I can get.
Fit and how it feels in my hand are how I choose my knives. I also see what I would use the knives for. I like to be able to get the most out of a few essential kitchen items.

Obviously a knife’s sharpness is essential, but it is truly more than that- with what ease does it slice through a tomato and a block of cheese, because it should do both with relative ease. How it feels in my hand, the weight and balance and comfort, are also extremely important.

I really notice the weight and feel of the knife in my hand. My Chicago Cutlery set is over 20 years old and still going strong. We tried to replace it with another brand that was a Christmas gift, but went back to my old set after one use of the “fancy, new” set!
