Down here in Texas, summer is all about cookouts, slow smoked barbecued meals, grilling, friends, family, and making memories. Summer is for relaxing, for long, lazy days, and easy delicious dishes. There are some basic recipes that come to mind when presented with smoky, sweet, tender pulled brisket; tacos, sandwiches, twice baked potatoes… but for some reason I kept thinking of nachos. Sweet, smoky, spicy, crunchy, salty.
Nachos are one of Nathan’s and my go to foods. When we’re tired, when we’re craving, and on days that end in y… we just want something that fulfills all our wants… Nachos typically fill all those wants; which is why I thought they’d be the perfect twist for the Family Recipes Reimagined 99 Days of BBQ with Farm Rich
Sweet and Smoky Barbecue Brisket – Crispy Corn Chips, Spicy Pickled Jalapenos, Sour and Sweet Pickled Red Onions, and 4 cheeses … these are the marriage of southern barbecue and tex mex… these nachos taste like 27 hours of prep in under 20 minutes.
Messy, wonderful, delicious, and easy. This is my favorite kind of recipe, y’all. Nathan’s already devoured several skillets full of these with the Farm Rich Brisket, next up, we’re going to try the pork. I served these with a side of sour cream and some extra barbecue sauce (spicy, of course) You can dip, drizzle, or top these however you’d like, these would also be good with some diced avocados.

4 Cheese Pulled Brisket Tex Mex Nachos
Ingredients
- 1 package 16 oz FarmRich Pulled Beef Brisket
- Tortilla Chips
- 4 Cheese Blend grated cheese
- Pickled Red Onions
- Pickled Jalapenos or Fresh Sliced Jalapenos
Instructions
- Pre-heat the oven to 400°F
- Heat the FarmRich Pulled Beef Brisket according to package directions
- Place a layer of tortilla chips in the cast iron skillet
- Top the tortilla chips with heated brisket and cheeses
- Top with more tortilla chips, brisket, and cheese
- Place in the pre-heated oven for 10 minutes
- Top with pickled jalapenos, pickled red onions, chopped cilantro, and barbecue sauce

What kind of barbeque sauce did you use?
Hi! I actually used Stubbs Spicy BBQ sauce for the dipping/drizzle – The Farm Rich Pulled Brisket comes in a smoky, sweet bbq sauce, but we liked the additional sauce.
