These honey mustard marinated, cornflake and parmesan crusted, baked chicken tenders are the 2nd recipe I’ve made and am sharing with y’all as a part of my participation in the Hellmann’s Chicken Change Up program.
Last month, I talked about our busy lives and shared with y’all my time saving Baked Chicken with Cream Sauce recipe that I made using Hellmann’s Mayonnaise.
It was easy, delicious, and best of all – quick!
This month for my Hellmann’s Chicken Change Up recipe – I’m talking about Picky Eaters and sharing a crazy delicious chicken tenders recipe that will have your pickiest eaters licking their fingers and asking for more.
Don’t shake your head at me or roll your eyes. I’m serious.
My daughter stuck her nose in the air and straight up told me… I’m not eating any chicken that you make with cereal.
(Cue me grabbing my hair and checking for 27 MORE gray hairs at the attitude and stubbornness that surely have my dad laughing and making snarky comments about karma.)
Monkey, in all his peace-making-everyone-happy way, told her to just try one bite to make Mom happy.
(Cue my heart bursting)
For once, I actually followed a recipe to the letter (I know!) and I must admit, I’m rather pleased with the results – and the kids were, too!
Even Little Miss Nose in The Air LOVED these and asked if she could help make them next time. And there WILL be a next time.

Baked Honey Mustard Chicken Tenders
Ingredients
- 6 Tbsp Hellmann's Mayonnaise
- 1 Tbsp Honey Mustard
- 1 lb boneless skinless chicken tenders
- 1 1/2 C cornflakes finely crushed
- 1/4 C grated Parmesan Cheese
Instructions
- Pre-heat Oven to 425°F
- In a small bowl, combine Hellmann's Mayonnaise and Honey Mustard - whisk and divide in half
- Place one half of the Honey Mustard/Mayonnaise mixture in the fridge (covered, for dipping)
- Crush the cornflakes (in a food processor, a plastic bag with a rolling pin, however you get them crushed/processed) and mix them with the Parmesan Cheese and place in a shallow dish.
- Toss the chicken tenders in the Honey Mustard/Mayonnaise mixture to coat and then dip them in the cornflakes/parmesan mixture until fully coated.
- Place on a wire rimmed/vented broiler tray over a baking sheet.
- Bake for 10 minutes (or until chicken is fully cooked, do not overcook)
- Serve with the other half of the sauce for dipping.

Those chicken strips sound good! My picky eaters will generally eat chicken strips and fries.
I think my kids would get a kick out of the chopsticks.
I can hardly WAIT to try these chicken strips. This is something I actually think my 3 year old will eat! SO excited!
BTW- I am a huge “Deceptively Delicious” fan, but since I already have both of Mrs. Seinfeld’s books I would love to get my hands on the “Substituting Ingredients” book. The bento boxes look adorable as well!
I just want to win a plateful of that. How do I do that? Also, I use frosted flakes as breading when I fry fish. KILLER GOOD!
Our picky eater loves meat, one of my favorite recipes to make him is a meatloaf with lots of veggies baked in.
And I love the sandwich cutters (trying to make sandwiches a more interesting and fun lunch choice around here), but I think my five year old would most love to have the chopsticks.
My picky eater pleasing recipe is anything fried! Like chicken or fish.
My favorite is the Kid’s Bento Box!

My favorite picky eater recipe is chicken strips prepared in any simple way. They should love this recipe and I do plan to try it. Even the just “peanut butter, please” eater will eat chicken strips!
The item in the giveaway that most appeals to me is the Match & Munch puzzle sandwich cutter. All items look very nice, but since I keep my 3 pre-K grandchildren daily, this would be really fun to use at lunchtime.

Oh myyy, I have some picky eaters, yes! I find things like cheese and ranch help (covering things in cheese or adding cheese, or having ranch to dip it in).
We love using sandwich cutters, but those cookbooks excite me the most 🙂

My picky eater pleasing recipe is my sneaky vegetable muffins. Carrot spice and Zucchini. I also throw in black beans in the brownies for picky little guy. I also make a sneaky spaghetti sauce packed full of pureed veggies. Your chicken looks so good and I think my picky little guy would eat it.
For the picky eater items. The match and munch sandwich maker and the substituting ingredients cookbook would be great ones for our house.

I’d love to have the substituting ingredients cookbook! It seems like I’m always looking for substitutions & always have to refer to the internet.
I’m the picky eater in my household lol! And that means nothing too daring, no tofu or squid or anything like that. Just basic meats, potatoes, maybe a few veggies. Chicken, mushrooms, onions, and cheese always goes over well in our house!

Hmmm, favorite picky eater recipe? Mine aren’t picky! Generally. I think right now I have to go with miso glaze. I can put it on salmon and my “I hate salmon” child will wolf it down. Yum!
And I so want the bento boxes. I actually have the laptop lunchboxes for the wee ones for school, but I want more more more 😉 For me, ya know.
What a unique recipe. I love that there are so few ingredients and steps. I tend to stick to just boring bread crumbs and they don’t crunch up like I would prefer. Trying these next week for sure 🙂
